Just got back from a week camping in the Vallemaggia. A true natual beauty of the Alps.
The clear fresh waters snaking between the huge rock formations of the valley make for an idillic destination.
Some deep pools with large rocks and cliffs are perfect for a bit of cliff diving!
And no camping trip is complete without a good wood fired BBQ with friends and beer.
Here the Barramundi BBQ came into its own.
Easy and compact to transport and cooked like a pro.
This time I wanted to try spare ribs. I wanted to recreate the delicious juicy taste that you get from a closed BBQ system. So to achieve this I simply wrapped the ribs in aluminium foil and cooked them on the BBQ for 30 min each side.
This is what they looked like after opening up the foil.
Then I grilled the outside to get the cruchy crackling skin as well. I cooked the other stuff at this time as well. Here is a pic of what the Barramundi BBQ looked like fully stacked with food for 8...
Those ribs tasted every bit as good as they looked! yummmmmmy
